Belle Amie Verte is an Absinthe from the "Les Parisiennes" serial. This Absinthe collection orientates at recipes and designs from the 19th century. For Belle Amie Verte (French for the beautiful green girlfriend) an Absinthe recipe from 1908 was used. Green anise and fennel together with wormwood (artemisia absinthium) build the backbone of this naturally olive-green Absinthe. After distillation additional coloring herbs are added to the spirit to give Belle Amie a natural green color. 

Once you mix this Belle Amie with water the green liquor louches to white. It is not as thick and opalescent compared to other Absinthes, but still very beautiful to watch. Once you take the first sip you will experience an aromatic explosion of alpine freshness. It all starts with fresh notes of anise and fennel. Then you will detect the perfumated taste of wormwood with vegetal undertones and citrus notes. The finish is long and lovely.

 

How to drink Belle Amie Verte Absinthe:

Belle Amie Verte is best to be enjoyed with 1 part Absinthe to 1 1/2 parts ice-cold water. This sounds little, but as the flavors of this Absinthe are not as intense compared to other Absinthes we liked this ratio the most. You should prepare your glass of Belle Amie Absinthe Verte according to the classic French Absinthe-ritual (see video). This means you add as well one sugar cube. The sweet flavors support the fresh taste and enhance the complexity of this Absinthe.

Ma Belle Amie
I first encountered this absinthe at the Vert d'Absinthe shop in Paris - now sadly out of business. It is herbal and full-flavored - slightly on the earthy side, but well-balanced. The louche is a thick milky green. I was told to take care not to over water it - it retains its fullest flavor when there is just the slightest film-like layer of transparent green on top. Note that the first editions of this absinthe had a red wax seal, but they changed to green when they started producing a white version - so, yes, the green wax is indeed for the Belle Amie Verte. I ordered three bottles - and all arrived quickly, sent to the US with no problems. Delicious!
