This exceptional Absinthe is produced on the Golan Heights in Israel. David Zibell, the owner and Master Distiller, runs the distillery Golani Spirits there. Romans 55 is an authentic reproduction of the 19th century French Romans Absinthe. Like the original, the new edition Romans 55 impresses with its complexity: licorice aromas combine with floral-caramel notes. The Absinthe is pleasantly soft without any alcoholic sharpness, but its taste is aromatic and strong. This can also be seen in the louche when water is added. It is decidedly dense and changes the initial amber hue of the Absinthe to a creamy golden white.
Romans 55 was a limited edition, these are the last available bottles of the 2019 bottling, a true collector's item.
The beginnings of the Romans Absinthe brand date back to the 19th century. On June 2, 1898, Mr. Pailherey and Mr. Bossan had the trademark "Romans" protected. Romans is the name of a town in the French department of Drôme. After parting ways with Bossan a few years later, Paulin Pailherey continued to manage the Romans brand on his own.
The distillery changed hands in 1910 and was sold to the O. Romeas distillery. However, 5 years later, Absinthe was to be banned. However, the brand still existed at the time of the ban. For there are documents on which, in February 1916, in response to the questionnaire about the fate of the staff, an employee indicated the number of 9 office workers and 15 salesmen. However, no figure was given about the number of workers who were engaged in manufacturing.
Golani Distillery is a family-run distillery in the Golan Heights region of Israel. Founded in 2014 by David and Alona Zibell, the distillery focuses on producing high-quality spirits. In 2016, they launched Israel's first-ever crowd-funded whiskey - a milestone for the family and distillery. Since then, the range has been continuously expanded. In addition to locally produced Whiskies, the range includes Absinthes and Gins that reflect the unique terroir of the region.
