Israeli Etrog Gin is distilled in traditional copper stills with 9 botanicals. These are juniper, angelica root, coriander, cassia bark, cardamom, myrtle, etrog (lemon citrus), lavender and black pepper. The Gin gets its light green color from an infusion with etrog juice and an additional maceration with etrog bark. Etrog Gin is gently sweetened and can be drunk neat as a refreshing lemony gin or classically as a Gin and Tonic.
The etrog (Hebrew אֶתְרוֹג Etrōg, German 'Ethrog', Yiddish Essreg) are various varieties of citron used by Jews during the Feast of Tabernacles or Sukkot.
The fruit used during Sukkot must be in perfect condition, free of impurities and blemishes. The tip, called the pitum, must not be broken off, although species that naturally do not have such a tip are also acceptable. It is important that the etrog not come from a grafted tree. Special value is sometimes given to an etrog by a groove-like notch known as an Adam's bite.
During prayer, the etrog is held in the left hand, while a bouquet of date, myrtle, and willow branches is held in the right hand. In haggadic literature, the festive bouquet is often interpreted symbolically. For example, it can be seen as emblematic of Israel and its various parts, as a representation of the archfathers and mothers and their virtues, or as a praise to God and His attributes (Vayikra Rabbah 30). In folklore, it is reported that pregnant women sometimes bite off the top of the fruit to ease the pain of childbirth, and it is also believed that the etrog can help infertile women.
The etrog is also often depicted in arts and crafts. There are special etrog containers that hold the fruit, and etrog bowls that can be ornately decorated. Etrog and lulav were often depicted on ancient synagogue mosaics.
