Description

Absinthe Sauvage is a French Absinthe distilled by the Emile Pernot Distillery. Its French name, Sauvage, means wild or uncultivated and expresses the unique character of this fine Absinthe. It is exclusively distilled with wild-grown wormwood from the surrounding mountains of the distillery. This is not an easy task, because in its native state wormwood grows high up in rocky outcrops, far from roads or even conventional hiking trails. Locating the plants takes time and the local knowledge of farmers, who have gathered these and other medicinal plants for centuries. But why do you decide to take all of this effort, does it really make the Absinthe taste better?

 

Wild-grown Wormwood: Why does it make Absinthe Sauvage so special?

For Absinthe Sauvage only wild-grown wormwood is used, as it was done in the very earliest days of Absinthe. Back in the days, this time intensive and often exhausting process was a result of the small production runs, a big-scale wormwood cultivation did not make economically sense. As a positive side-effect the harvested wormwood had a very high quality, as it was entirely uncorrupted by human intervention (or modern agriculture). And this wild-grown wormwood can still be found in the surrounding mountains. As a direct lineal descendent of the wild plants first gathered more than two centuries ago when Absinthe was invented, it guarantees premium authenticity and is the ideal fundament for a very unique Absinthe.

 

Absinthe Sauvage recipe and taste:

After the harvest, the wormwood sprigs are slowly and meticulously dried over many months in a storage room, the so called "Séchoir". After that distillation takes place. Sauvage makes use of a traditional recipe from 1804. Like all classic Absinthe recipes, it is based on the holy trinity of Absinthe: Wormwood, fennel, and green anise, but of course other mountain herbs are used in lesser quantities in both the distillation and the all-natural green coloration. Overall you will experience a powerful Absinthe, full of taste but balanced and fresh. Worth to mention is as well the aroma of this Absinthe: Once the bottle is opened a tempting scent of mountain herbs fills the room.

Spicy herbal goodness with a disappointingly thin louche. I prefer my absinthe to coat my mouth and linger which this does not, however it does taste and smell wonderful. (Posted on 6/26/2023)

I can't write a review with more detail than Matthew's so I'll just say I agree on all points with his description. This was the first absinthe I've had that had such a slow building louche--I was actually worried it wouldn't louche at all! Complex, woodsy/floral taste. (Posted on 11/8/2022)

Color:
Before water - Earthy, forest green yearning for peridot. Not quite as deep as chartreuse, and not as light as yellow chartreuse. Very natural looking. The 2022 bottle was closer to emerald, very enticing
After water - The color is pale, pastel minty green, and amber with red highlights and powdery blue around the edges.
Louche:
Builds SO slow I was worried for a moment it wasn't going to fully louche. Lovely trails that dance on forever! I had a lot of natural light to work with which brought out nearly every color, red, blue, amber, some yellows, orange, seafoam green... Finally louched at about 2:1, almost 2.5:1! Very enjoyable!
Aroma:
Before water - Outdoorsy, wild and spicy, with a bit of mint
After water - A bit brighter and herbal, citrusy, the mint wants to come forward more and the outdoorsy note is more of an accent, Sichuan peppercorn (don't know how to describe Sichuan peppercorn, IYKYK)
Taste:
3.5:1 - My preferred dilution. Wild, spicy, minty wormwood. Anise is present but never dominates. If you're not the biggest fan of anise, or you've got a friend that's not anise's biggest fan, this is definitely an absinthe to try. The anise is there and it's lovely, but there are so many other flavors, it's really just there to marry them together. A tad bitter mid way through and Sichuan peppercorn is in there as well. For the intensity, it's still very well balanced and rounded out by tangerine confectionery sweetness.
4.5:1 - Still very lovely, but I like the intensity of the lower dilution. Brighter, more herbal, the mint comes forward a bit more. The tangerine confection, and anise are more present. That wild wormwood note is rounded out with nice floral notes and a touch of coriander.
Finish:
Even at lower dilution it finishes with an appreciable sweetness and outdoorsy, almost conifer note. Mild tongue numbing. The outdoorsy, wild wormwood finishes it off and hangs out for a bit. I'd like it to hang out longer. It hangs out just long enough to make me pour another glass
Overall:
This absinthe transported me to the middle of a Pontarlier forest in springtime! Magnificent! One of my favorites. (Posted on 9/29/2022)

The new batch of Sauvage is great! I was quite leery of it because the Pernot absinthes really went downhill a while back. It seems as though they may have gotten their act together. This Sauvage is now named is Absinthe 1804. But it does say Sauvage in smaller print on the label. To me, anyhow, it tastes very close to the original runs of it. The predominant flavor is very high quality wormwood. A big thanks to Mike Schallehn and Alandia for making this available again. Yeah it's pricey, but in my opinion it's worth it.
