There are often common misunderstandings about buying real Absinthe. People sometimes think that the green spirit known as the Green Fairy is still illegal and poisonous. This is not true, buying a bottle of Absinthe is legal, also in the USA. It was legalized in America in 2007. In Europe, Absinthe was already legalized in 1988. Why did they legalize the Green Fairy? Because Absinthe is not a hallucinogenic drug. Although real Absinthe contains wormwood and therefore the active ingredient thujone you will not see pink elephants after drinking some glasses (sorry). The thujone concentration in the spirit is very low (35mg/l is the legal maximum) and in general, thujone does not have psychedelic effects.
It is important to mention, that the amount of thujone in Absinthe was not higher in the 19th century. This is a common myth. Vintage Absinthes were analyzed and, the levels were sometimes even lower than today. What primarily causes and caused the so-called Absinthe effect is the high alcohol percentage of 68% ABV / 136 proof or more. Other spirits like vodka and whiskey have an alcohol percentage of 40% ABV / 80 proof. Therefore, Absinthe in comparison is very strong (more than 50% stronger). Your body is not used to the high alcohol concentration, which causes the effect. But again, do not expect to see pink elephants, Absinthe will not give you hallucinations. It will give you the mental state of drinking a very strong spirit.
Below, you can see a video of the traditional French Absinthe ritual. It is the method how you should drink Absinthe. As you can see, this ritual does not include fire. You only use ice-cold water, sugar and an Absinthe spoon or fountain. This is the traditional way of serving Absinthe. The fire ritual is a modern invention that we actually do not recommend. It is dangerous to set your Absinthe on fire. The glass can crack, especially if the Absinthe inside the glass catches fire. And the fire destroys the fine flavors of any Absinthe. It is like mixing a good red wine with Coke, you simply should not do it.
An alternative way of serving the Green Fairy is the Absinthe fountains preparation. The fountain replaces a water carafe. It is a big glass bowl, which is filled with ice cubes and water. Through the spouts, the cold water drips into the Absinthe glass. With an Absinthe fountain you will get a very intense louche, as water is slowly added to the Green Fairy. It is the professional way of serving Absinthe.
