This Jade Absinthe is made in reference to the original Pernod Fils Absinthe of the early 20th century. The distiller Mr. Ted Breaux is a well known Absinthe enthusiast and chemist, famous for making authentic reproductions of  vintage Absinthes of the Belle Epoque era. And indeed, this Absinthe is tasty and delicious, read more about its story in the next paragraph.

 

What is the story of Absinthe Jade PF 1901?

Absinthe PF 1901 is a tribute to what is the best known and most widely sampled pre-ban Absinthe: Pernod Fils. PF 1901 takes its name from the year in which the original Pernod Fils distillery in Pontarlier caught fire. When the distillery was rebuilt and repaired, out-dated alembics were replaced by the most modern equipment of the time. The old alembics were either destroyed by the fire and sold for scrap or sold off to smaller distilleries. The Combier Distillery purchased two of these 1100 liter stills and installed them along with the 8 smaller stills which had been a part of the distillery since 1894. The importance of this history and especially the authenticity of these two circa 1870's alembics were not overlooked when Ted Breaux chose the Combier Distillery in which to make Jade vintage Absinthes clones. PF 1901 is a classic Absinthe, balanced and crisp, with an appetizing herbal aroma and a smooth, lingering aftertaste.

It should be noted that a large cache of pre-ban Pernod fils Absinthe has recently been discovered and amongst the well-preserved bottles, there were a few in a remarkable state of preservation, retaining their original color and freshness. Those who have been fortunate enough to have been able to taste these and have also tasted the pre-release Jade PF 1901, are unanimous in their remarks as to the striking similarities between the vintage bottles and the Jade clone.

This is by far The Best Absinthe I have ever had! The taste is great, It doesn't have that heavy liquorice anise flavor! It almost taste like fruity cucumber water, Really well done! Definetly will buy again! (Posted on 2/20/2023)

Ok the sunburn flavor and the maybe the dried up liquor causes the sample used to base this absinthe on is a bit heavy on the star anise, the sunburn overshadows everything. this may represent a real sample of pernod from 1901, but this does not make a good absinthe, or a good sample used.
I really like the combier blanchette apparently used as a base, but i think this does not represent a pernod fils from the specified era.
This absinthe tastes like blanchette (or like any jade absinthe) with added herbs.

Also, is fun to drink and consider that it tastes like that of the absinthes that were to be had in the 1800s...

Appearance:
Before water - Olive green peridot, almost emerald
After water - Grey, white around the edges, thick milky, melon green with olive green tones in the center
Aroma:
Before water - Fig jam seasoned with wormwood and anise, a maybe a hint of dried plum
After water - Black licorice with sweet citrus notes, and a little bit of musky earthy angelica root, some bitterness and a little savory
Louche:
Nice opalescent trails and layering, builds a little quick and thick
Taste:
I don't know if I'm just sensitive to it today or what, but the angelica root is really popping out at me. Comes in sweet with musk and earth, then the anise and wormwood interrupt for a second, fennel runs along the tongue, back to anise which coats your entire mouth as well as a bit of sichuan pepper on the back of the tongue, then some sweet citrus, like mandarin or tangerine. Finish:
Fennel wraps things up along with some pepper while the anise clings to the side of the tongue, and a little floral
Overall:
