Review:
Caselli is a great Italian Absinthe! One plus is its historical context, it was concieved before the Moulin Rouge was built and before the Eiffel Tower was erected! This absinthe like many great absinthes was being produced in the Bella Epoque Era (late 1800's to pre WWI)! Don't let the strange blue color fool you,it really is a great tasting absinthe. It has the high, medium, and low notes one looks for in a well made absinthe (not flat), and It is smooth. I like the taste of anise and in Caselli it is present but not overpowering. I wanted to try something different and it does not dissapoint, however, I have tasted absinthes that I liked more. All pickiness aside this is a GREAT absinthe at a low price! 9/10

Review:
I really like this Absinthe! The flavor is truly unique! there is a wonderful herbal tones pervading the drink opening on the palette. I notice hints of cedar and something called "Spruce Gum" (A chewing gum made from the resin of the spruce tree). I intend that description to mean it is a wonderful rich flavor (additional notes of Thyme are present). The anise is present and also very well balanced with the rest of the herbs. As the previous reviewer described it is a very (sort of "Electric Blue") blue color that changes to "baby blue" when louched. This is a wonderful Absinthe and I believe it would go wonderfully with various foods (especially sharp cheddar cheeses). I cannot give five stars to Absinthe that uses artificial coloring. Otherwise this Absinthe would get my five star rating. I will be buying this again.

Review:
First of all, this is indeed a good choice for an Italian Absinthe. It has a strong flavor of anise without being too bitter, though it has few undertones of any other flavors. At 120 proof this is good with or without sugar, and is just strong enough to have a bite when it goes down. Sometimes misleading in the pictures, this absinthe IS actually blue, turning from a sky blue to a baby blue after the louche. The bottle doesnt have much to look at on the cover, but the box has some information and would be a good part of a display. The spoon that comes with this one is solid and good looking as well. Overall a decent product for the price, and a good choice if you feel the need to go Italian.
