Saffron is a spice derived from the flower of Crocus sativus, commonly known as the "saffron crocus". The stigmas, called threads, are collected and dried to be used mainly as a seasoning and colouring agent in food. To glean 1 lb (450 gr.) of dry saffron requires the harvest of 50,000–75,000 flowers which needs twenty hours of labour to pick. Therefore saffron is among the world's most costly spices by weight. The price ranges from 7 to 25 Euro per gram. It is mainly cultivated in Iran, but is also native in southern Europe, like France, Spain and Greece. Real saffron has a lighty sweet taste, fake saffron is often made with the spice curcuma and can be identified by its slightly peatiness, less subtle taste.
